JIM'S TERRIFIC MAC SALAD 
Makes a bunch!

1 (16 oz.) box macaroni pasta noodles
1 (16 oz.) block sharp cheddar cheese, diced into 1/4-inch cubes
1 large purple onion, finely chopped
1 cup celery, finely chopped
1 (12 oz.) can low-sodium Spam, diced into 1/4-inch cubes
6 hard boiled eggs, coarsely chopped
1/4 cup bacon bits (Hormel)
2 tbsp. spicy brown mustard
3/4 cup Miracle Whip salad dressing
1/2 cup mayonnaise (Hellmann's or Best Foods)

Cook pasta according to package directions (DO NOT OVERCOOK). Drain and rinse.

In a bowl, combine all other ingredients with macaroni. Mix completely.

Cover with Saran or plastic wrap and chill in refrigerator for at least two hours before serving.

Serve and enjoy!
