BEEF STROGANOFF 
2 lbs. tenderloin tips or sirloin meat
4-5 tbsp. sour cream
8-10 oz. brown gravy
2 tbsp. sliced scallions or dry chives
1 tbsp. lemon juice
1/2 lb. sliced mushrooms (opt.)
1/3 c. cooking oil
1 tsp. salt
1 tsp. black pepper

Use a large frying pan. Slice tenderloin meat into 1/4" strips. Bring cooking oil to smoke and quickly saute tenderloin strips to attain a nice brown color. Do not over load frying pan by cooking only 1 pound of meat at a time, being careful not to burn. Then boil sour cream and brown gravy together and add sauteed tenderloin strips with the drippings from the frying pan. Add chives and lemon juice and thoroughly mix with a wooden spoon. Boil for 1 minute and serve. Salt and pepper to taste. NOTE: Over cooking will result in tough meat. Preparation Time: 30 minutes.
