CARROT CAKE 
2 c. self-rising flour
1 1/2 c. sugar
4 eggs
1 c. oil
1/2 c. coconut
2 c. carrots, shredded
1 c. crushed pineapple, drained
1 tsp. vanilla
1 tsp. cinnamon

Combine all dry ingredients; add rest of ingredients in order listed. Mix by hand to moisten. Pour in a greased and floured sheet cake pan; bake at 350 degrees until it tests done.

ICING:

1 stick butter, softened
1 (8 oz.) cream cheese, softened
1 lb. powdered sugar
1 tsp. vanilla
1 c. nuts, chopped

Mix and ice cake.
