COCONUT ALMOND CARROT CAKE | |
1 1/2 c. flour 1 1/2 tsp. baking powder 1/2 tsp. salt 1 tsp. cinnamon 1 c. sugar 1 c. oil 2 eggs 1 c. finely ground carrots 1/2 c. chopped almonds 2 c. raisins 2/3 c. coconut 1 can cream cheese icing Mix dry ingredients. Beat sugar and oil at medium speed. Stir in flour mixture. Add eggs one at a time. Stir nuts, carrots and 2/3 cup coconut. Pour into greased baking pan. Bake at 350 degrees for 35 minutes or when tester comes out clean. Cool before removing from pan. Cover with cream cheese icing. |
