COCONUT CARROT CAKE | |
2 c. flour 2 1/2 tsp. baking soda 1 c. Crisco oil 3 eggs 2 c. grated carrots 1/3 c. coconut 2 tsp. cinnamon 1 tsp. salt 2 c. sugar 1 (8 oz.) pineapple & juice 1/2 c. chopped nuts Mix flour, soda, cinnamon and salt. Beat oil, sugar and eggs thoroughly. Add flour mixture. Beat until smooth. Add pineapple, carrots, nuts and coconut. Pour into greased 9 x 13 inch pan. Bake at 350 degrees for 45 minutes until tests done. Cool and remove from pan. |
