CARROT COCONUT CAKE | |
2 c. sifted flour 2 tsp. cinnamon 1 tsp. baking soda 1 tsp. baking powder 1/2 tsp. nutmeg 1 1/2 c. sugar 1 c. coconut 1 c. chopped nuts 2 c. grated carrots 1 1/2 c. vegetable oil 3 eggs 1 (8 oz.) can crushed pineapple 1 tsp. vanilla Beat eggs; beat oil with sugar. Add eggs. Beat well. Add dry ingredients. Beat well. Add grated carrots, pineapple, nuts, and coconut. Mix well; add vanilla. Bake in a greased and floured bundt pan. Set oven at 350 degrees for 115 minutes or until done. Test with toothpick. |
