CARROT CAKE 
2 c. flour
2 c. sugar
2 tsp. salt
2 tsp. cinnamon
4 eggs
1/2 c. Wesson oil
3 c. grated carrots

Bake in three 8 inch pans for 30 minutes at 350 degrees or until done.

ICING:

1 (8 oz.) pkg. cream cheese
1 stick butter
1 box powdered sugar, white
2 tsp. vanilla
1 c. coconut
1/2 c. pecans

Sift sugar and melted butter. Soften cream cheese. Mix together. Add other ingredients. Put icing on top of cake only. Like icing German Chocolate Cake.
