CHEESE - SPINACH - SAUSAGE PIE 
1 lb. sweet Italian sausage links, chopped
6 eggs
2 (10 oz.) pkgs. frozen chopped spinach, thawed and well drained
1 (16 oz.) pkg. Mozzarella cheese, shredded
2/3 c. Ricotta cheese
1/2 tsp. salt
1/8 tsp. pepper
1/8 tsp. garlic powder

Have pastry ready for 2-crust pie. Cook sausage well browned. Spoon off fat. Reserve 1 egg yolk.

In large bowl combine remaining eggs with sausage and next 6 ingredients. Spoon mixture into pastry. Cover mixture with pastry; press gently around edge. Cut a hole in center of pie. Brush with egg yolk mixture. Bake at 375 degrees for 1 1/2 hours or until golden brown. Good.
