BEEF AND BROCCOLI STIR FRY 
1/2 lb. beef
2 tbsp. corn starch, divided
4 tbsp. soy sauce, divided
1 tsp. sugar
1/2 to 1 lb. broccoli
3 tbsp. peanut oil, divided
1 onion, chunked
1 to 2 carrots, chunked
1 stalk celery, chunked

Cut beef. Combine 1 tablespoon corn starch, 2 tablespoons soy sauce with sugar. Stir into beef and boil and let stand for 15 minutes. Combine remaining corn starch and soy sauce with 1 cup water. Set aside.

Heat 1 tablespoon oil on high, add meat and stir fry for 1 minute. Remove from pan. Add rest of oil and add vegetables and stir for 4 minutes or until crisp.

Stir in meat soy sauce and water mixture. Bring to a boil, cook and stir until thickened. Serve over rice.

Very good recipe. Instead of boiling starch, soy and sugar I marinated it in the mixture. I left out carrots and celery and went with garlic, ginger, mushrooms, green peppers and green onions instead. Dinner was fantastic. Makes 4 servings. I doubled everything and got 8. Made 2 cups rice with 4 cups water was perfect amount.
