HAMBURGER, CORN & CABBAGE CASSEROLE | |
2 lb. hamburger 1 can whole kernel corn 1/2 head cabbage 8 oz. shredded Cheddar cheese Brown 2 pounds hamburger in large skillet. Drain. Add 1 can corn with liquid. Chop 1/2 head cabbage as you would for making cole slaw. Add to meat and corn. Season with salt and pepper to your preference. Reduce heat to medium and cover with lid. Stir occasionally. When cabbage is tender, add 8 ounces of shredded Cheddar cheese. This will feed 7-9 people. It is economical and fully balanced nutritionally. Even cabbage haters will enjoy this meal. |

This was a yummy and pretty healthy meal. I added a small amount of Italian ground sausage and also zucchini.
We served it over brown rice with Asian sweet chili sauce.
