HAMBURGER-CORN CASSEROLE WITH
WHITE SAUCE
 
1 1/2 lb. ground beef
1 c. chopped onion
1 (12 oz.) can whole kernel corn, drained
3/4 tsp. salt
1/4 tsp. pepper
3 c. med. noodles, cooked and drained
1 c. soft bread crumbs
3 tbsp. melted butter

Lightly brown ground beef. Add onion. Cook until tender, but not brown. Add corn, white sauce, salt, and pepper. Mix well. Stir in noodles. Pour into 2 quart casserole. Mix bread crumbs and butter. Sprinkle over top. Bake at 350 degrees for 30 minutes or until hot. May be done in microwave until heated through.

WHITE SAUCE:

4 tbsp. butter
4 tbsp. flour
1 tsp. salt
Few grains pepper
2 c. milk

Melt butter. Add flour, salt, and pepper and stir until smooth over very low heat. Add milk slowly, stirring constantly. Cook slowly, stirring constantly, until smooth and thickened.

Since microwave ovens vary in power, you may need to adjust your cooking time.

My Mom, in the 60's and 70's, made a similar recipe with these exceptions: She used the Pillsbury refrigerated biscuits on top (instead of bread crumbs) and baked until golden brown, and she usually left out the vegetables in the sauce (serving veggies on the side). You can also use peas instead of corn if using a vegetable. I choose to use the very fine egg noodles instead of medium. It was a hearty, homey meal that my family really enjoyed with the smooth, mild hamburger sauce contrasted with the warm, crisp baked biscuits on top. Makes me think of home!
