SHRIMP GUMBO 
2 lbs. shrimp
1 block butter
1 c. chopped onions
1 (8 oz.) can tomatoes
1 (6 oz.) can tomato sauce
1 qt. water
1 lb. okra, cut
3/4 c. green pepper
1 tsp. parsley
1 tsp. salt
Pepper to taste
1 bay leaf

Cook okra with melted butter and add onions, green pepper. Then add tomatoes, tomato sauce, water and seasonings. Simmer at least 1 hour. The longer, the better. Add shrimp 10 minutes before serving gumbo. I usually cook for 1 hour and 30 minutes. You don't want to over cook shrimp.
