PINEAPPLE CHICKEN STIR FRY 
1 lb. boneless chicken, cut in bite size pieces
2 tsp. rub ginger
2 tbsp. oil
1 tbsp. cornstarch
1 tbsp. soy sauce
4 oz. cashews
1 can diced pineapple
Cooked rice

Heat oil over medium heat. Rub ginger into chicken. Cook chicken until white. Mix pineapple juice, cornstarch, and soy sauce. Add to cooked chicken and cook until mixture thickens. Add cashews and pineapple and cook 1 minute. Serve over rice.
