CAPER BURGERS 
1 egg, beaten
2 tbsp. plain yogurt
1/4 c. fine bread crumbs
Dash pepper
1 lb. lean ground beef
3 tbsp. capers
1 tbsp. brown mustard
2 slices Swiss cheese
4 spinach leaves (optional)
4 lettuce leaves (optional)
4 kaiser rolls, split and toasted

In a medium mixing bowl combine egg and yogurt. Stir in bread crumbs and pepper. Add ground meat and mix well. Shape mixture into 8 1/4 inch thick patties. For stuffing, mix capers and mustard. Place about 1 tablespoon stuffing mixture atop each of 4 patties. Top with remaining patties.

Press meat around edges to seal well. Place patties on an unheated rack in a broiler pan. Broil 304 inches from heat about 13 minutes, turning once. (Or grill patties on an uncovered grill, directly over medium-hot coals for 13-14 minutes, turning once.) Top burgers with cheese. Heat just until cheese melts. Serve on spinach or lettuce lined rolls. Serves 4.
