NO MEAT BURGERS 
1 c. ground walnuts
1/2 sm. onion, finely chopped
1 stalk celery, finely chopped
1 sm. carrot, finely chopped
1/2 c. cooked brown rice
2 eggs, beaten
Salt and pepper to taste
6 slices Cheddar cheese

Saute onion in 1 tablespoon butter until clear, add celery and carrots to onions and continue to saute about 2 minutes. Remove from heat, mix vegetables with remaining ingredients. Shape into patties. Patties can be broiled or pan fried. Add 1 slice cheese to each patty. Serve on your favorite roll with low fat dressing or mustard. Yields six burgers.
