MEAT AND CHEESE MUFFINS | |
FILLING: 1/2 lb. ground beef 1 tbsp. chopped onion 1/2 c. cheddar cheese 1/8 tsp. salt Dash pepper MUFFINS: 1 c. all purpose flour 1 tsp. baking powder 1/2 c. milk 1 tbsp. butter, melted 2 tbsp. sugar 1/2 tsp. salt 1 egg, beaten Preheat oven to 425 degrees. Grease a 12-cup muffin pan. Mix ingredients for meat filling. Shape into 12 patties the size of muffin cups. In large bowl, combine all dry ingredients. In small bowl, combine milk, egg, and butter. Add milk mixture to dry ingredients and stir until milk is absorbed. Don't overbeat; mixture should be lumpy. Spoon about 1/2 tablespoon batter into each cup; top with meat patty and another 1/2 tablespoon batter. Bake 20 minutes. Reduce to 300 degrees, bake 10 minutes until brown. Cool on wire rack. Makes 12 muffins. |
