MEAT AND CHEESE MUFFINS 
FILLING:

1/2 lb. ground beef
1 tbsp. chopped onion
1/2 c. cheddar cheese
1/8 tsp. salt
Dash pepper

MUFFINS:

1 c. all purpose flour
1 tsp. baking powder
1/2 c. milk
1 tbsp. butter, melted
2 tbsp. sugar
1/2 tsp. salt
1 egg, beaten

Preheat oven to 425 degrees. Grease a 12-cup muffin pan. Mix ingredients for meat filling. Shape into 12 patties the size of muffin cups. In large bowl, combine all dry ingredients. In small bowl, combine milk, egg, and butter. Add milk mixture to dry ingredients and stir until milk is absorbed. Don't overbeat; mixture should be lumpy. Spoon about 1/2 tablespoon batter into each cup; top with meat patty and another 1/2 tablespoon batter. Bake 20 minutes. Reduce to 300 degrees, bake 10 minutes until brown. Cool on wire rack. Makes 12 muffins.

The proportions are way off on this recipe. You'll need twice the muffin batter to cover the little burgers. And I would make the cheese a layer on top of the burger instead of mixed in. It vanished inside the meat. The flavors were good but not a muffin to speak of with those proportions.
