ZUCCHINI BREAD 
2 1/2 c. sugar
1 1/2 c. oil
4 eggs
3 c. flour
2 tsp. baking powder
1 tsp. baking soda
1 1/2 tsp. cinnamon
Nuts if desired
1/2 tsp. salt
3 c. grated zucchini squash

Beat well sugar, eggs and oil. Add combined dry ingredients, little at a time. Stir in zucchini and add nuts (if desired). Pour into well greased 2 bread pans or angel food cake pan. Bake 1 1/2 hours at 325 degrees.
