SMOTHERED FISH 
3 lbs. orange roughy
Salt and pepper
1/3 c. dry sherry
1/2 lb. sliced mushrooms
6 tbsp. butter
1/2 c. Parmesan cheese
1 c. sour cream
Paprika

Place fish in shallow baking dish. Sprinkle with salt and pepper. Sprinkle sherry over the fish. Saute mushrooms in butter; spread over fish. Combine 4 tablespoons butter, Parmesan cheese and sour cream. Spoon on top of fish. Paprika to color. Bake at 350 degrees for 30 to 40 minutes.
