FISH FILLET AU GRATIN 
1 lb. fish fillets
1 onion, thinly sliced
Salt and pepper
Dash of paprika
2 tsp. parsley
3 tbsp. cooking sherry
1/2 c. shredded Cheddar cheese

Place sliced onion in bottom of broiling pan. Place fish over onions. Sprinkle on salt, pepper, paprika and parsley. Pour on sherry. Broil 10 minutes. Sprinkle on cheese, broil an additional 5 minutes until cheese melts. Serves 4.
