TROUT OR PIKE AU GRATIN 
3 lb. trout or pike
1/2 c. butter
1/2 c. bread crumbs
1 c. chopped mushrooms
1 sm. onion, chopped
1 c. grated Parmesan cheese
1/2 c. fish stock or water

Preheat oven to 350 degrees. Brush pan with butter and sprinkle with bread crumbs. On this place the whole fish. Sprinkle generously with bread crumbs, the mushrooms and onion browned in butter, and the grated cheese. Dot generously with pieces of butter. Add stock. Bake for 45 minutes. Preparation takes 15 minutes. Serves 6.
