SOY BRAISED FISH 
1 fish, 1 1/2 to 2 lbs.
1/2 tsp. salt
Flour to dust
2 tsp. minced fresh ginger
1 stalk green onion, minced
1 c. water
4 tbsp. soy sauce
2 tbsp. sherry
1/2 tsp. salt
4 to 6 tbsp. oil

Rinse cleaned fish in water, then dry well. Cut diagonal slits 1/2 inch apart on both sides. Salt fish, then dust with flour. Mix ginger and green onions, add water, soy sauce, sherry and salt. Heat oil over high heat, then gently place fish in pan and fry 1 minute on each side. Lower heat to medium, fry additional 2 to 3 minutes on each side, continuously basting fish with the hot oil. Pour ginger- green onion mixture over fish and bring to a boil. Cover and cook over medium heat 15 minutes (7 1/2 minutes on each side).

COMMENTARY: Browning the fish can be done ahead of time; pour ginger- green onion mixture over fish just before serving. Also 2 cups of fresh tomatoes or diced tofu may be added to ginger-green onion mixture, cooked just to heat through.
