RICE CASSEROLE 
2 c. cooked rice
1 c. sour cream
1 can Rio Tel tomatoes and green chilies
8 oz. shredded Monterey Jack cheese
8 oz. Mozzarella cheese, shredded

Cook rice as per package directions. Stir in sour cream, tomatoes and green chilies and Monterey Jack cheese. Sprinkle top with Mozzarella cheese. Bake at 350 degrees for 45 minutes in 2-quart casserole.
