RICE-N-CHEESE CASSEROLE 
2 c. water
1 tsp. salt
1/2 tsp. red pepper sauce
1 med. onion, chopped
2 c. shredded Mozzarella or Cheddar cheese
4 eggs
1/2 c. grated Parmesan cheese
1 c. uncooked rice
1/2 tsp. dry mustard
1/4 tsp. pepper
1 med. green pepper, chopped
2 1/2 c. milk

Heat water, rice, salt, mustard, red pepper sauce and pepper to boiling, stirring once or twice; reduce heat. Cover and simmer 14 minutes. Don't peek! Remove from heat. Fluff rice with fork, cover again and let set for 5 to 10 minutes.

Layer 1/2 of the rice, onion, green pepper and cheese in greased baking dish, 11 x 7 inches; repeat. Mix eggs and milk; pour over rice. Sprinkle with Parmesan cheese.

Cook uncovered in 325 degree oven until set, about 45 to 50 minutes. Let set 10 minutes before cutting into squares.
