SPINACH CASSEROLE 
1 c. rice, cooked
1 pkg. frozen chopped spinach, thawed
1 1/2 lb. hamburger
1 onion, chopped
1 sm. can whole mushrooms
1 tsp. oregano
Salt and pepper to taste
2 cans cream of celery soup
1 c. (or more) sour cream
1 c. (or more) grated Mozzarella

Brown onion and meat. Drain fat. Add mushrooms, seasonings, and frozen (partially thawed) spinach. Cover and steam until spinach thaws. Add other ingredients. Pour into baking dishes (enough for 2). Bake uncovered at 350 degrees for 1 hour or until heated through. On a busy day can be baked at 275 degrees for 2 hours. Freezes beautifully.
