OVEN - FRIED POTATOES 
1 med. sized potato person (approximately)
1 tbsp. melted low-fat butter or oil
1 tsp. chopped parsley
Salt, to taste

Scrub potatoes, removing blemishes, eyes, etc. Cut in eighths or smaller and put in plastic Ziploc bag. Add oil or butter and the parsley, shake to coat evenly. Spread in low baking dish (large pie plate will do). Salt. Cover with foil and bake 35 minutes, removing foil for last 10 to 15 minutes to brown.
