LENTILS AND SAUSAGE 
1 1/2 c. lentils
1 lg. onion, sliced
2 carrots, sliced
1 pkg. frozen Swiss chard
1 bay leaf
1 tsp. salt
Dash of pepper
1 smoked pork sausage ring

Rinse the lentils thoroughly. Place the lentils, onion, carrots, chard, seasonings and 2 cups boiling water in a saucepan and bring to a boil. Lower heat and simmer for 30 minutes. Add the sausage and cook for 20 to 30 minutes longer. Remove to serving platter. Slice sausage and place in overlapping rows on top. 6 to 8 servings.
