SAUSAGE LENTIL SOUP 
1 tbsp. safflower oil
1 c. coarsely chopped onion
2 carrots, sliced
1 lb. smoked sausage (I use 90% fat free smoked turkey sausage)
1 1/2 c. beef broth
3 c. water
1 c. no-sugar-added applesauce
1 1/4 c. dried lentils, rinsed and cleaned
1/4 c. white wine
1 tsp. basil
1/2 tsp. rosemary
1/2 tsp. marjoram
Salt and black pepper, to taste

Cook onion and carrot in oil until soft. Add halved and sliced sausage; lightly brown. Add broth, water, applesauce, lentils, wine, and seasonings. Cover and simmer 30 minutes. Taste and add more seasonings to taste; cook another 20 minutes.
