SAUSAGE LENTIL SOUP | |
1 1/4 c. dry lentils, rinsed 1 1/2 lbs. Polish sausage, sliced 1 (6 oz.) can tomato paste 3 potatoes, peeled and cubed 1 med. onion, chopped 1 c. chopped carrot 1/2 c. chopped celery 1 1/2 tsp. instant beef bouillon granules 3/4 tsp. dried thyme, crushed 1/8 tsp. pepper Crockery directions: In pan combine lentils and 5 cups water; bring to a boil. Reduce heat. Cover; simmer 30 minutes. In electric slow crockery cooker combine undrained lentils with remaining ingredients. Cover; cook on low heat 9 hours. Skim off fat if any. Also, can be done on top of stove, cook on low heat for several hours. Microwave directions: In 4 quart casserole combine lentils and 5 cups water. Micro-cook, covered, on HIGH 15 minutes, stirring twice. Add remaining ingredients. Cook, covered, on MEDIUM 25 minutes, stirring 3 times. Skim off fat, if any. Serves 6. |
