FRESH APPLE CAKE | |
3 c. flour 2 c. sugar 3 c. pealed and chopped apples 1/2 tsp. lemon juice 2 tbsp. vanilla 2 eggs (beaten) 1 1/2 c. oil 1 1/2 c. nuts 1 tbsp. cinnamon 2 c. brown sugar Glaze: 1 c. sugar 1 tsp. cinnamon 1 c. brown sugar packed 1/2 stick butter 1/2 c. milk 1 tsp. nutmeg 1 tsp. cream of tartar Combine oil, eggs, sugar, vanilla, and lemon juice and beat 2 minutes at medium speed. Stir in flour and beat at low speed. Stir in apples and nuts. Spread 1/2 of batter in 13 x 9 x 2 pan. Mix 1 Tbsp. cinnamon and 2 c. brown sugar (packed) and sprinkle on batter. Spread on rest of batter. Bake at 325°F for 40-45 minutes. Combine ingredients for glaze and bring to boil. Boil 2 minutes and spread on cake. |
