FRESH APPLE CAKE | |
4 cups diced or sliced apples (about 4 apples) 2 c sugar 2 eggs 1 c cooking oil 2 1/2 c flour 1 tsp salt 2 tsp. baking soda 2 tsp cinnamon 1 c pecans Pour sugar over apples, mix and let stand. Let the apples juice. Mix all dry ingredients. Separate 2 eggs and beat whites until stiff. Pour cooking oil, egg yolks with apples and mix. Add dry ingredients, egg whites, and pecans; mix well. Pour in tube or bundt pan. Bake for 1 hour at 350°F. Let stand about 15 minutes before removing from pan. |
