FRESH APPLE CAKE WITH BUTTERMILK
SAUCE
 
4 c. diced apples
2 c. sugar
1-1/2 c. chopped nuts
3 c. all-purpose flour
1/2 tsp. nutmeg
1/2 tsp. salt
1/2 tsp. cinnamon
2 tsp. baking soda
1 c. oil
1 tsp. vanilla
2 eggs

Mix together first three ingredients and let set for 1 hour. Stir often. Add flour, nutmeg, salt, cinnamon and baking soda to apple mixture. Add oil, vanilla and eggs. Mix well by hand. Pour into a greased tube pan.

Bake at 350°F for 1 hour and 15 minutes.

Buttermilk Sauce:

1 c. sugar
1 c. buttermilk
1 tsp. baking soda
2 tsp. Karo syrup
1/2 c. (1 stick) butter
1 tsp. vanilla

Simmer while cake bakes. Pour sauce over cake before removing from pan. It will soak in. Turn sauce side up on a plate.
