VEGETABLE CASSEROLE (FRESH) 
2 lg. onions, diced
2 tbsp. butter, melted
3 carrots, sliced
1 med. green pepper, sliced in rings
1/2 lb. fresh green beans, cut in 1 inch pieces
2 lg. tomatoes, peeled & sliced
1/4 c. parsley, chopped
1 3/4 tsp. salt
1/4 tsp. seasoned salt
1 1/2 tsp. fresh ground pepper

Saute onion in butter until golden. Separate into rings. Place onion, carrots, green pepper, beans, tomatoes, and parsley in a greased 2-quart shallow casserole dish; mix lightly. Add seasonings. Cover and bake at 350 degrees for 1 hour until vegetables are tender, stirring once. 8 servings.
