FRESH VEGETABLE CASSEROLE | |
3 ears corn (2 c.) 1 med. tomato (3/4 c.) 1 green pepper, chopped 1 med. onion (1/2 c.) 2 c. (8 oz.) shredded Cheddar cheese 1/3 c. cornmeal 3/4 c. milk 1/2 tsp. salt 1/4 tsp. pepper 2 eggs, beaten Prepare vegetables. In a large bowl combine corn, tomato, onion, green pepper, cheese and cornmeal; let stand 30 minutes. Combine milk, salt, pepper, beaten eggs and mix well. Pour vegetable mixture into buttered shallow 2 quart dish. Pour egg mixture over top. Bake in preheated 325 degree oven for 35 to 40 minutes until set. |
