FRESH VEGETABLE CASSEROLE 
1/4 lb. butter
1 1/2 c. sliced onions
1/2 c. diced green peppers
1 1/2 c. carrots, cut in circles
1 c. celery, cut in 1/2-inch pieces
2 c. green beans
3 tbsp. minute tapioca
2 c. canned tomatoes
1 1/2 c. sliced mushrooms, fresh or canned
Salt and pepper to taste

Preheat oven to 350 degrees. Place the butter, onions, green pepper, carrots, celery, and green beans in a large heavy pot. Cover and cook over very low heat for 15 minutes. Add the remaining ingredients. Taste and correct the seasonings.
