BREAKFAST CASSEROLE WITH
VEGETABLES
 
This breakfast casserole is simple to make, very tasty and nicely balanced.

6 eggs
1 tbsp. fresh mixed herbs, chopped (or 1 tsp. dried mixed herbs)
fresh ground black pepper and/or crushed red pepper and/or cayenne pepper, etc.
2 (14-16 oz) cans mixed vegetables, drained
1 lb high quality, very lean sausage
1/4 - 3/4 cup shredded cheese (s) (if desired, whatever varieties)

Whisk eggs, herbs and pepper (s) in mixing bowl. Stir in well-drained vegetables. Break up sausage into small pieces and stir into mix. Pour into greased, covered casserole dish.

Sprinkle with cheese (s) if desired. Cover and bake at 375°F until eggs are set--about 40-45 minutes. Immediately drain any excess grease after removing from oven.
