OATMEAL MEATLOAF 
1 c. tomato juice
3/4 c. Quaker oats
1 egg
1/4 c. chopped onion
1/2 tsp. salt
1/4 tsp. pepper
1 1/2 lb. lean ground beef

Preheat oven to 350 degrees. Combine all ingredients except ground beef. Mix well. Add ground beef, mix lightly but thoroughly. Press into 8 x 4 inch loaf pan. Bake 1 hour. Drain, let stand 5 minutes.

HINT: This better when it's refrigerated then re-heated.

I've made this recipe for years, however, in a moment of inspiration, I reduced the tomato juice to 3/4 of a cup and added a 1/4 cup of barbecue sauce. It's just a small amount but adds to the flavor.

Instead of tomato juice, I use just about any kind of bloody mary mix I have on hand. I have used Zing Zang, which is excellent. Tonight I will be using Famous Dave's "Devil's Spit" Bloody Mary Mix.

Hello everyone. I looked at all of the comments and meatloaf is not my favorite. It was a child hood tradition but we ate it way too much. As an adult I have switched to Ground turkey and use "sweet baby ray's" barbecue sauce inside and on top and it is a "FANTASTIC" Twist on tradition. My family, mom included loves it.

Mom taught me to make this back in the late 60's or early 70's. Since then I've modified by adding finely chopped green peppers, and a dash of chipotle pepper, garlic powder. I use low sodium V8 and skip the salt. Then when 20 minutes left in cooking time I drain and a mixture of ketchup, chopped onion & green peppers, Worcestershire sauce, honey, cayenne & chipotle powders on top and finish baking. (Easy on the pepper powders if you can't stand the heat.) You can use brown sugar instead of honey but I never seem to have any in the kitchen.

I've been making this delicious recipe since the early '70's. I found in it Family Circle, however the original recipe called for tomato sauce, not tomato juice. I have used tomato sauce, spaghetti sauce, and recently I even tried using pizza sauce for a different flavor, and we love it! I also add garlic, and I use alot more than just 1/4 cup of onion!

I have been making this recipe since I was first married (45 yrs) and have found no better recipe for meatloaf. I use 1 (8 oz.) can tomato sauce instead of juice and top with catsup before baking.
