SOFT SHELL CRAB J.D. 
1 c. milk or half & half
1 stick butter
2 tbsp. flour
1 bunch green onions, chopped
3 lbs. shrimp, peeled
1 tsp. seafood seasoning
1 tbsp. garlic, chopped
1 tbsp. fresh parsley, chopped
1 (6 oz.) Cheez Whiz
5 oz. white wine
4 soft shell crabs, cleaned

Saute the green onions and garlic in butter until soft. Add flour and lightly blend. Add wine, Cheez Whiz, seafood seasoning and parsley. Stir to blend well. Add shrimp and cook until pink. Add milk or cream to mixture and cook until sauce is slightly thick, if necessary, add more milk. Set sauce aside. Dip the cleaned soft shell crabs in milk and egg. Flour crabs and fry in peanut oil until light brown. Top the crabs with shrimp sauce.
