TASTY MOUNTAIN OVEN-FRIED
CHICKEN
 
2 1/2 to 3 lb. broiler fryer, cut up
1 c. flour
2 tsp. salt
1/4 tsp. pepper
2 tsp. paprika
1/2 c. butter
Honey-Butter Sauce

Preheat oven to 400 degrees. Dip chicken pieces into mixture of flour, salt, pepper and paprika. Melt butter in a shallow baking pan in hot oven. Remove baking pan from oven. As pieces of floured chicken are placed in pan, turn to coat with butter, then bake skin side down in a single layer.

Bake in 400 degree oven for 30 minutes. Turn chicken. Pour honey- butter sauce over chicken. Bake another 30 minutes or until tender. Spoon honey-butter sauce over chicken again. (Lower oven temperature if chicken appears to be browning too fast.)

SAUCE:

1/4 c. melted butter
1/4 c. honey
1/4 c. lemon juice

Melt butter and beat in honey and lemon juice.
