SUMMER VEGGIE MEDLEY 
1 tbsp. butter, butter or oil
1 onion
3 sm. to med. zucchini &/or yellow squash
1 can stewed tomatoes or 2-3 fresh tomatoes
Herbs, oregano, sweet basil, salt & pepper (to your liking)
3/4 c. frozen fresh corn, optional
Grated cheese, optional

Saute butter and onions. Slice zucchini/squash sideways into thin circles (1/8 inch thick). Add to onions. Add tomatoes. Add salt, pepper and herbs to taste. Simmer with lid. When zucchini/squash is cooked, add corn, if desired. Serve with grated cheese on top.
