PUMPKIN LOG 
Preheat oven to 350 degrees. Grease and flour 15 inch cookie sheet.

CAKE ROLL:

3 eggs
1 c. sugar
2/3 c. pumpkin
3/4 c. plain flour
1 tsp. baking soda
1/2 tsp. cinnamon

Beat together: Eggs and sugar. Add other ingredients and mix. Pour unto cookie sheet and sprinkle with nuts, if desired. Bake 15 minutes at 350 degrees. Sprinkle powdered sugar freely on dish towel. Remove cake from oven when done; turn out on dish towel. Roll together, towel and cake. Refrigerate to cool.

FILLING:

8 oz. cream cheese
2 tbsp. butter, mix together
1 c. powdered sugar
3/4 tsp. vanilla

Unroll cake; spread mixture. Roll up; wrap in waxed paper. Store in refrigerator. You can even make the cake part the day before if short on time.
