PUMPKIN LOG 
Log (Cake):

3 eggs
2/3 c. pumpkin
1 c. sugar
3/4 tsp. pumpkin pie spice
3/4 c. flour
1 tsp. baking soda

Mix eggs, pumpkin, sugar, spice, flour and soda together. Pour onto cookie sheet covered with wax paper.

Bake at 350°F for 15 minutes.

Filling:

2 tbsp. butter
8 oz. cream cheese
1 c. powdered sugar
3/4 tsp. vanilla

After log has been baked, turn onto a towel sprinkled with powdered sugar. Peel off waxed paper. Roll up log with towel. Cool in refrigerator 40 minutes to 1 hour. Unroll log and spread filling. Roll log back up. Let set in refrigerator for 15 minutes.
