PUMPKIN LOG 
3 eggs
1 c. granulated sugar
2/3 c. pumpkin
3/4 c. flour
1 tsp. baking soda
1 tsp. baking powder
2 tsp. cinnamon
1 tsp. nutmeg
1 tsp. ginger
1/2 tsp. salt
1 tsp. lemon juice
1 c. nuts, chopped

FILLING:

1 c. powdered sugar
1 (8 oz.) pkg. cream cheese
4 tbsp. butter
1 tsp. vanilla

Beat eggs 2 minutes. Add sugar gradually and beat 5 minutes. Add pumpkin and lemon juice; mix. In small bowl, mix dry ingredients. Add to pumpkin mixture; mix well. Line jelly roll pan with waxed paper; grease paper with shortening. Pour batter onto waxed paper and spread evenly. Sprinkle with nuts. Bake in 350 degree oven 10 minutes. Sprinkle tea towel generously with powdered sugar. Turn baked log out onto towel; remove waxed paper. Roll log up with towel lengthwise. Cool. Mix filling ingredients and spread on cooled log. Reroll without towel.
