CHEESY PEACH COBBLER 
4 cups fresh sliced peaches
3 tsp. lemon juice
2/3 cup sugar
2 2/3 tbsp. tapioca
1/4 tsp. nutmeg
1/2 tsp. cinnamon
1/8 tsp. salt
3 tbsp. butter
1 cup grated cheddar cheese
2 cups biscuit mix (Bisquick)
4 tbsp. (1/2 stick) butter, melted
2/3 cup milk

Preheat oven to 400°F.

Sprinkle lemon juice over peach slices. Combine sugar and tapioca; blend with peaches and let stand for 15 minutes.

Add spices and place peach mixture in greased baking dish. Dot with 3 tablespoons butter. Bake at 400°F for 20 minutes or until hot and bubbly.

Cut cheese into biscuit mix until consistency of pastry mix. Add melted butter and milk; mix well. Drop heaping tablespoonful of batter on top of hot peach mixture; return to oven for 15 minutes more or until biscuits are golden brown.

Makes 10 servings.
