BEEF JERKY | |
4 lbs. beef (not fatty) (roast or steak), cut into strips 1/8 to 1/4 inch thick MARINADE: 1/2 c. liquid smoke 3 c. soy sauce 1/2 lb. brown sugar Optional for extra taste: cayenne pepper (sprinkle on carefully), garlic salt, crushed red pepper Place beef in marinade and cover. Turn meat every 20 minutes to be sure all meat is covered equally, until the liquid is absorbed (this can be done overnight). Drain in a colander; place on trays and dry in dehydrator 24 to 48 hours (mine takes about 16 to 20 hours. I don't like it too dry) or on lowest heat of oven until dried the way you like it. This makes a big amount, so I cut the recipe to 1/4 of all ingredients. |
