PUMPKIN BREAD OR MUFFINS 
1 c. pumpkin, cooked
1/2 c. oil or soft butter
1/2 c. honey
2 eggs
1 3/4 c. whole wheat flour
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
1 tsp. cinnamon
1/2 tsp. nutmeg
1/3 c. water
1/2 c. nuts, chopped (optional)
Cream cheese (optional)

Beat oil and honey together in bowl, add eggs; mix well. Combine dry ingredients in another bowl. Add dry ingredients and water to honey mixture. Mix in pumpkin and nuts. Preheat oven to 350 degrees. Grease loaf pan or put cupcake liners in muffin pans. Spoon in batter. Bake 1 hour for loaf, or 20 to 25 minutes for muffins. Cool loaf 15 minutes before inverting to take it out of the pan. If you like, ice with cream cheese mixed with honey.
