SWEET AND SOUR FISH 
2 lb. fish fillets (sea squab, flounder, rock fish, etc.)
1 (11 oz.) can mandarin oranges
1/2 c. commercial sweet and sour sauce
1 tbsp. cornstarch
1 sm. onion

Put fish into shallow foil lined baking pan. Drain oranges, reserving juice. Put juice and cornstarch in a small pan and cook, stirring constantly over medium heat until mixture thickens. Remove from heat and stir in sweet and sour sauce. Slice onion into very thin rings. Put oranges and onion in pan with fish. Pour sauce over all. Bake in 350 degree oven for 20 to 30 minutes. Makes 6 to 8 servings.
