QUICK CHICKEN CURRY | |
1 1/2 c. cooked chicken or turkey, cut in bite size pieces 1/4 c. vegetable oil 1 sm. tart apple, chopped 1 med. onion, chopped 1 clove garlic, minced 1/4 c. peanut butter 2 c. milk 3 tbsp. flour 3 tsp. curry powder 1/2 tsp. salt 1/8 tsp. cinnamon 1/8 tsp. ginger Heat oil in large skillet. Add chicken, apple, onion and garlic. Cook over moderate heat for about 5 minutes or until onions are tender. Stir in peanut butter; sprinkle in seasonings. Stir until all is evenly coated. Slowly stir in milk. Cook, stirring constantly until sauce thickens and bubbles. Serve over rice or noodles. Serves 4-6. |
