CHICKEN DIVAN VEGETABLE
CASSEROLE
 
3 whole chicken breasts
4 carrots, sliced thin
1 bunch fresh broccoli tops
1 pkg. fresh mushrooms, sliced
1 can cream of chicken soup
2/3 c. milk
1 c. grated Cheddar cheese
1 tsp. curry, optional
1 tbsp. lemon juice
1/3 c. melted butter
1/2 c. bread crumbs
1/2 c. freshly grated Parmesan cheese

1. Season chicken with garlic, bay leaves and salt; cook until tender. When cool, bone it and pull in small pieces.

2. Spray baking dish (9 x 13 inch) with Pam. Place raw vegetables in the bottom. Follow with chicken.

3. Make sauce with chicken soup, milk, Cheddar cheese, lemon juice, curry and butter. Spread evenly on top of chicken.

4. Cover with bread crumbs and Parmesan cheese.

5. Bake at 350 degrees for about 45 minutes.
