CHICKEN VEGETABLE CASSEROLE 
1 tbsp. cooking oil
1 clove garlic
1/2 tsp. paprika and pepper
8 oz. yellow squash
1 c. sliced red pepper
1 (3 lb.) chicken, cut up
2 tsp. rosemary
1 (16 oz.) can whole tomatoes
1/2 c. mushrooms
1/2 c. white wine

Heat oil in large pot. Add chicken and garlic, sprinkle salt, pepper and paprika. Cook for 3 minutes. Add tomatoes, onion and wine and rosemary; cook for 20 minutes. Add squash, mushrooms and red peppers; cover and cook 10 minutes. Remove cover and cook for 10 minutes or more to remove juices. Makes 4 servings.
