FISH SUPPER 
2 med. potatoes
1 lg. carrot
1 lg. onion
1 med. rib celery
1 1/2 tbsp. butter
1 tbsp. lemon pepper seasoning
1 tbsp. lemon juice
1/2 med. green pepper
1 med. tomatoes
Fish fillets

Dice all vegetables, put in baking dish. Melt butter, stir in with seasoning. Pour 1/2 the butter mixture over vegetables. Cook until potatoes are almost tender. Let stand 2 minutes. Arrange fish on top of vegetables. sprinkle lemon juice over fish. Drizzle remaining butter mixture then scatter green pepper on top. Scatter tomato over top. Cook until fish is done when tested. Let stand 2 or 3 minutes before serving.
